Overheating issue

I have a 2005 equinox it overheats. The lower intake manifold gasket was leaking so I replaced it. Still overheats, took thermostat out to test and is good, took water pump off to inspect and it was good! Been bleeding the air out of system still overheats. When it goes above halfway mark on temp gauge I raise rpms to 3k for under a minute and cools down. That's why I thought water pump but that appears to be fine! Any insight?

Do the fan or fans run when the engine is overheating?
Have you pressure tested the cooling system including the cap?
