Me and my Father need to remove the engine from a chevy malibu 2001 (v6 3.1 liter)?

My Malibu has been having a series of problems lately, I had new coil packs put in, replaced the cam shaft, and the crank postioning system on it. It was running fine for a while, but then i noticed lots of steam and water leaking from the exhaust. I didn't think much of it until one day i checked my oil level for the heck of it and saw that it was very very high, and very discolored, As i wonder what could have happened i thought back on the fact that my car was having coolant problems and then right away knew that my engine was literally eating the antifreeze. I fried a head gasket or maybe both of them, i would like to replace the head gaskets, the pistons and reshape my cylinders. In order to do that I need to remove my engine from the rest of the body. I haven't tried removing the engine yet but i would like some information before i start taking things apart. This question requires an answer urgentlly i am out of a job without my car, your answer would be very much appreciated.
