Can someone explain Carburetors to me a bit on a 1980 Corvette?

I just got my rebuilt engine and my car guy told me that the next upcoming thing is going to be a carburetor. They told me that good brands are carter and eddlebrock. they also said something about new intakes? also they said no more than 650 cfm. They talked about getting more power, so i would like that. i checked out a few websites, but i am not really sure what a good price is for what im buying and not sure what the cfm makes a difference
 
cfm is cubic foot per minute- which is how air flow can be measured. A stock 350 will move approx. 600-650cfm. A 650cfm carburetor can only mix enough gas to accommodate the 650cfm of air flow.

Edelbrock is a very good choice I would Highly recommend you call them and look into a carb/manifold kit.

When in doubt call them.
Tuning is the key though you will need to know a few things from your mechanic as far as what was done during the rebuild. Cam lobe and such so they can recommend a kit to work with everything eliminating unnecessary tuning. It is also recommended you have the re builder install and tune the new kit. Discuss the kit with the re builder before purchasing to make sure.
