2004 Chevy Silverado 1500 somehow losing power?

I have a 2004 Chevy Silverado 1500, with the 4.3L V6.I have been having a problem with getting full power while driving. No matter where or when I am driving, or how hard I accelerate, I never get full power from the engine. It feels like the engine is bogging down and sometimes even wants to cut out. I really feels like an exhaust problem, such as a clogged cat, I know this because I have had that problem on a different vehicle. I am also getting a check engine light that is throwing a code that is supposed to be related to the cats or fuel. This is what I have tried to fix it: 1.) checked the cats (it has two which appear to be fine inside and out, looks good through the inside and no rattles), 2.) completely cut the cats off (didn't help at all, so welded them back on), 3.) replace O2 sensors ($80 bucks a pop with no results and can't return them), 4.) replace plugs (needed to be done anyway, but didn't help), 5.) replace fuel filter and run fuel system cleaner through with fresh good gas (no help). This has been going on for close to a year and I still have the check engine light on. Can anyone please help me? Could it possibly be the computer?
