Temp gauge and A\C both work intermittently

Hello everyone... I have a 2008 Trailblazer that is having a strange issue. Most of the time the temp gauge and the A\C work perfectly. However, occasionally the A\C blows only warm or ambient air if I switch over to heat that works fine but what I noticed was that the temp gauge is always sitting on 100' when the A\C is not working. After driving around for 15 minutes or so the temp gauge suddenly starts showing what you'd expect the engine water temp to be and at that time the A\C starts blowing cold air.

No dash indicators or errors are noted. any push in the right direction would be greatly appreciated.:)
 
if the computer cant get a reliable engine temperature reading it disables the AC system. Start by checking the connector on the temperature sensor to see if it is loose, corroded, broken wire, etc. The sensor itself may need replacing. You can also rent a IR gun to check what the actual temperature is when the gauge reads 100. If the gauge is accurate your thermostat is sticking in an open position.
 
On March 11th I did bring to a Chevrolet/GMC Service provider, my 2008 Chevy Trailblazer with the same problem. The code was P0128. But they cannot find a solution to this problem. Up to date, I have taken my vehicle 4 times to service without any good result. They replaced: the coolant temperature sensor, the entire harness (and connectors) from sensor to PCM, but the problem remains.
 
The thermostat was already changed. The question is: a faulty thermostat may cause the temp gauge stop working? Because, there is a moment where any thermostat should be open (normal operation temp), and the temp gauge should show a reading. Why the computer show this code?, I do not know. Also, when the computer is reset, everything return to normal until it began to pick codes. First, the gauge and A/C stop working, and later the check engine light turn up.
 
The AC isnt working because of the temperature readings the computer is sensing. For the code P0128 below are the listed repair recommendations. When the gauge is reading 100 has anybody checked actual temperature with a Infared gun?
Verify coolant strength & level
Verify proper cooling fan operation (check if it's running more than it should). Replace if necessary.
Verify proper engine coolant temperature (ECT) sensor operation, replace if necessary. Verify proper intake air temperature (IAT) sensor operation, replace if necessary.
If the above items check out good, replace the thermostat
