Quick "list" of engine sensors for '89 C1500??

Hi -- own a 1989 C1500 Chevy Silverado, 5.7/350, 2WD. Slowly trying to "bring it up to speed" and get it more and more back among the land of the living. Essentially, trying to rebuild the maintenance history on it as much as possible. I've done some work on it over the years, but want to really have an idea of where we stand at this point.

Is there a quick and dirty list of sensors that, for example, contribute to the general health of the engine? Just a few I thought of: Oxygen sensor, IAC valve, MAP, engine coolant temp. . .? I'm sure there are others, but I'd love to see a run-down if anyone can help. I'm enjoying working on this thing and so just want to have a working list of what I can do to bring the patient back to health.

Try Rockauto and see what they list but unless you have a reason to replace something don't see a need to just throw parts at the engine.
 
Hi -- right, sorry, I should clarify -- it runs rough. Will stall occasionally. Now, I think I understand that the motor in this thing might not necessarily run like a sewing machine. At this point I'm really just building a list -- also trying to understand what different components contribute to the running health of the engine itself.

Have you done a tuneup? Plugs, plug wires, filters, cap and rotor.
Fuel pressure test including how long pressure is maintained after engine is shut off?
Have you checked for codes?
How many miles on engine?
