2008 chevy silverado 4.3 -temp. gauge quits and both coolant fans kick on.?

message center says engine hot and a/c turned off but engine is not hot, both cooling fans will stay running until everything is reset, to reset you disconnect the BATTERY and everything will return to normal for a while but will come back. changed the coolant sensor in the head but nothing changed
