What are the downsides? I know insurance and gas will be ridiculous but I can easily handle it. Is there anything else I should be worried about?

You have to really take car of that car and i mean really. Any car that is carburated requires you to do weekly check ups and fix everything to keep it running. The value of that car will also go down since it will get wear and tear. Sunlight will make the paint fade.

Collectables should be weekend drivers not daily.
