We would be driving 6 hrs with it, and I know we would need pads and ties, but I wondered if we could put it on top of a 2 dr chevy cavalier with ties and pads?

You could do it, i wouldnt advise it but it could be done, i would recomend tying a thick string to the passerengers oh shit handle inside the door then around the canoe one or twice and then over to the drivers side handle. if you tie it tight it should be alright, i wouldnt recomend speeding with it either

Actually, depending on the state you are in and where you are going, I would check for overhang regulations.
Here in WA state there is a 3' overhang limit. Anything longer and you get pulled over - don't remember the amount but it's a good size ticket.
I had a 16' on an Astro van and it only overhung about 12 either end at most., but 16' on a Cavalier? Also, have you considered the front windshield obstruction?
